Two Chinese cooking techniques fall under the category of stir frying these are ch?o and bào there are differences between the two methods in the amount of heat, speed of cooking and frequency of tossing. The stir-fry technique was created originally by the Chinese to save fuel through reduction of cooking time, with more time being spent on the preparation of the food. The original flavours of the food are preserved by these methods of preparation and cooking giving stir fried food its fresh flavoursome taste. In order to create good stir-fry food investing in a non stick or carbon steel wok is recommended. The woks properties (depth and sloping sides) allow for varying temperatures whilst cooking and are perfect for cooking stir-fried food.
