Ingredients
1 cooked, skinned and sliced chicken breast
300g bag of stir-fry vegetables
2 tbsp oil
2 tbsp soy sauce
75g crushed peanuts/cashews (optional)
Rice/ noodles
Directions
Heat the wok/stir-fry pan and add oil.
Add vegetables and chicken, cook and stir for 3 mins.
Add about 50ml of water and cook until evaporated.
Add soy sauce and peanuts/cashews (if used), stir thoroughly.
Serve with rice or noodles.
